MORAVIAN ORANGE CAKE
5 to 6 c. flour
1 tsp. salt
1/3 c. butter
2 eggs
2 c. packed brown sugar
1 tsp. cinnamon
1 c. very warm water (120 to 130 degrees)
2/3 c. sugar
2 pkgs. dry yeast
1 c. mashed potatoes
1/2 c. butter

In large bowl mix 1 1/2 cups flour, sugar, salt and dry yeast. Add butter. Slowly add water and beat 2 minutes. Add potatoes, egg and 1/2 cup flour. Beat well. Stir in enough flour to make a soft dough. Knead until smooth about 8 to 10 minutes. Place in oiled bowl. Cover; let rise in warm place about 1 hour.

Meanwhile cream 1/2 cup butter with brown sugar. Blend in orange juice, cinnamon and orange peel. Punch dough down and turn out onto floured board. Divide in half. Roll 1/2 dough into a 12 x 18 inch rectangle. Spread with 1/2 of sugar mixture. Roll up as if a jelly roll. Seal edges. Slice into 18 pieces. Place in a 9 inch square pan - 4 staggered rows (5-4-5-4). Let rise 1 hour. Bake at 350 degrees for 30 minutes. Remove from pan and let cool. Drizzle with confectioners' sugar frosting.
