SWEET POTATO SURPRISE CAKE 
1 1/2 c. oil
4 eggs, separated
3 tsp. baking soda
1 tsp. cinnamon
1 c. chopped nuts
2 1/3 c. sifted cake flour
1 1/2 c. grated raw sweet potatoes
2 c. sugar
4 tbsp. hot water
1/4 tsp. salt
1 tsp. vanilla
1 tsp. nutmeg

Combine oil and sugar. beat until smooth. Add egg yolks and beat well. Add hot water, then the dry ingredients that have been sifted together. Stir in potatoes, nuts, vanilla and beat well. Beat egg whites until stiff and fold into mixture. Bake in 3 greased 8 inch pans at 350 degrees for 25-30 minutes. Cool and frost.

FROSTING:

1 lg. can Pet milk
1 stick butter
1 c. sugar
3 egg yolks
1 1/3 c. coconut

Combine cream, sugar, butter and egg yolks in pan. Cook 12 minutes over medium heat stirring constantly. Remove from heat. Add coconut. Beat and cool.
