1 c. butter
2 c. sugar
4 eggs
2 1/2 c. mashed sweet potatoes
3 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda
1/2 c. nuts, chopped
1/2 c. flaked coconut
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. nutmeg

Cream butter and sugar until light and fluffy. Beat in eggs 1 at a time. Add vanilla and mashed potatoes. Sift all dry ingredients and fold in. Mix well and add nuts and coconut. Bake in tube pan at 325 degrees for 1 hour 15 minutes. When cold, glaze with 1/2 cup pineapple juice and 1/4 cup sugar.
