SWEET POTATO CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 eggs
4 tbsp. hot water
2 1/2 c. flour
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. raw sweet potato, grated
1 c. nuts, chopped
1 tsp. vanilla

Blend all your ingredients. Beat real good like you would any cake. Pour batter into 3 9-inch greased and floured cake pans. Bake at 350 degrees until done and brown.

FROSTING:

1 lg. can evaporated milk
1 stick butter
1 tsp. vanilla
1 c. sugar
1 1/2 c. coconut
