4 eggs
2 c. self rising flour
2 c. sugar
1 c. oil
1/2 c. sweet milk
1 c. cooked mashed sweet potatoes
1 c. chopped pecans or walnuts
2 tsp. baking powder
1 tsp. ginger
1 tsp. cloves
1 tsp. cinnamon
1 tsp. nutmeg
Dash of salt
1 tsp. vanilla

Mix all dry ingredients together and set aside. Beat eggs, add sugar and oil; mix well. Add dry ingredients to mixture, add milk and potatoes. Add nuts last. Bake in tube pan at 375 degrees about 50 minutes or until toothpick comes out clean.
