SWEET POTATO CAKES 
2 c. mashed sweet potatoes
1/2 c. walnuts, chopped fine
3 tbsp. butter
1/2 tsp. salt
2 tbsp. hot milk
Flour
Butter

Press down potatoes in measuring cup firm or your cakes will be too soft.

Combine first 5 ingredients and beat well. Take small amounts of mixture into palms of your hands and shape into patties. Roll in flour and brown in butter over low heat. Turn and brown other side. If necessary, cakes can be kept warm in a 250 degree oven.
