SWEET POTATO CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 egg yolks
4 tbsp. hot water
2 1/2 c. flour
1/4 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. grated raw sweet potato
1 c. chopped nuts
1 tsp. vanilla

Combine oil and sugar, beat until smooth. Add egg yolks and beat well, add water, then dry ingredients which have been mixed together. Stir in potatoes, nuts and vanilla. Beat egg whites and put into mixture. Bake in 3 layers, at 350 degrees for 20 to 25 minutes.

FROSTING:

1 can evaporated milk (lg.)
1 stick butter
3 egg yolks, saved from above
1 tsp. vanilla
