QUICK AND EASY COFFEE CAKE 
1 1/2 c. buttermilk biscuit mix
1/3 c. sugar
1/4 c. chopped pecans
1/2 c. milk
1 egg
1/2 tsp. vanilla
2 tbsp. cooking oil
1/3 c. buttermilk biscuit mix
1/3 c. brown sugar
2 tbsp. butter
1 tsp. cinnamon

Combine 1 1/2 cup biscuit mix, sugar and pecans in mixing bowl. Add milk, egg, vanilla and oil. Beat by hand, mixing well. Pour onto greased 8-inch round baking dish suitable for microwave cooking. Combine remaining ingredients until crumbly. Sprinkle over batter. Micro cook 4 to 7 minutes on High. Rotating dish a half turn after 2 minutes. Check for doneness at 4 minutes. The cake is done when the top is almost dry and springs back when touched. Cool 15 minutes; drizzle with Orange Glaze.

Serves 10 to 12.

Orange Glaze:

3/4 c. sifted confectioners sugar
1 tbsp. orange juice and 1/2 tsp. grated orange rind

Drizzle over cake from tip of spoon.

Since microwave ovens vary in power, you may need to adjust your cooking time.
