PAT'S POTATO PANCAKES 
2 eggs
1/2 onion, chopped
1 tsp. salt
1/4 c. parsley flakes
2 c. diced raw potato
1/4 c. flour

Combine eggs, onion, salt, parsley and 1 cup of potatoes in blender. Run on high until well mixed. While running, add flour and second cup of potatoes. Blend well. Fry in 1/4 inch of cooking oil until browned.
