SPINACH DISH 
1 1/2 lbs. fresh spinach or Swiss chard

Cook and cool slightly, drain and chop.

Saute 1 med. onion in 2 tbsp. butter, add spinach
1 c. shredded Cheddar cheese
1 c. shredded Monterey Jack cheese

Layer cheese with spinach mixture in 9 x 13 inch pan.

Mix:

4 eggs
1 c. buttermilk
1/4 c. flour
Few drops hot sauce
