LAYERED NOODLE SPINACH DISH 
4 oz. med. noodles (I used 7 oz.)
2 (10 oz.) pkg. frozen, chopped or leaf spinach
3 tbsp. butter
2 tbsp. flour
1/2 tsp. salt
1/2 lb. Gruyere cheese, grated (I used 1/4 lb. Cheddar & 1/4 lb. Jack cheese, grated instead)
1/4 tsp. paprika
1/8 tsp. white pepper
1 c. milk

Cook and drain noodles, then cook and drain spinach, white sauce with butter, flour, salt, paprika, pepper and milk. Remove sauce from heat and stir in spinach. Grease an 8 x 12 x 2 inch pan. Layer half of the cheese, all of the spinach and white sauce, the half noodles and the remaining half of cheese. Bake at 400 degrees for 15 minutes or until bubbly.
