SPINACH NOODLE CASSEROLE 
1 (10 oz.) pkg. noodles (med. wide)
2 pkgs. Hollandaise sauce mix
1 1/2 c. water
1/2 pkg. grated Parmesan cheese
1/4 c. Italian seasoned bread crumbs
2 (10 oz.) pkgs. frozen chopped spinach
1 tsp. dry mustard
2 c. sour cream
1 tsp. salt
1 tbsp. butter

Cook noodles and spinach separately according to package directions and drain each. Set aside 1/4 cup spinach. Combine sauce mix, mustard, water and cook until bubbly. Remove from heat and stir in sour cream. Stir remaining spinach, noodles and 1/2 cup Parmesan cheese and salt and mix into sauce mix.

Pour into 12 x 7 x 2 inch baking dish. Spread reserved spinach in center of casserole - cover and bake 30 minutes at 350 degrees. Combine in separate bowl, bread crumbs, 2 tablespoons Parmesan cheese and 1 tablespoon butter. Remove baked casserole and spread bread crumbs around spinach (make ring around center spinach). Bake uncovered for 10 minutes more.

I have been making this recipe during Thanksgiving and Christmas for more about 20 years. My children loved it and still request it whenever we get together. I originally had it in a old cookbook that has since been stored away. I was glad that I found it online!!!
