COUNTRY CARROT SALAD | |
2 c. shredded carrots 1/2 can crushed pineapple (8 oz. size), drained 1 1/2 tsp. lemon juice 1/4 c. plain lowfat yogurt 1/2 tsp. cinnamon Dash of nutmeg Dash of cloves 1/2 tsp. orange peel, fresh or dried 1/2 stalk celery, chopped 1/4 c. walnuts, chopped 1/4 c. raisins Combine carrots, pineapple, lemon juice; set aside. Mix together yogurt, spices and orange peel. Add to carrot mixture; stir. Add celery, walnuts, raisins. Mix thoroughly. Serves 6. Per 1/2 cup serving: calories 80, fat 2.9 gm, cholesterol 1 mg, sodium 25 mg. |
