CARROT-RAISIN SALAD 
2 c. grated carrots
1 c. unsweetened crushed pineapple, drained
1/2 c. raisins
1 (8 oz.) carton plain low-fat yogurt
7 lettuce leaves (optional)

Combine carrots, pineapple and raisins; mix well. Chill for 2-3 hours. Stir in yogurt and serve on lettuce leaf, if desired.
