APRICOT NUT BREAD 
2 c. dried apricots
1 c. boiling water
4 tbsp. butter
1 1/2 c. sugar
2 eggs, beaten
3 c. flour
2 tsp. baking soda
1/4 tsp. salt
1 c. nuts, chopped

Preheat oven to 325 degrees. Cut apricots in small pieces and let stand in boiling water for 15 minutes. Cream butter and sugar; then add eggs. Sift together flour, soda and salt. Combine all ingredients and add chopped nuts. Grease two pans, pour in batter and bake at 325 degrees for 1 to 1 1/2 hours. Bread slices best when a day old. Wrap in aluminum foil. May be frozen.
