APRICOT - NUT BREAD 
2 c. boiling water
2 c. coarsely chopped dried apricots
2 c. sifted flour
3 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1 c. sugar
2 eggs
2 tbsp. melted butter
3/4 c. fresh orange juice
3/4 c. chopped nuts

Pour boiling water over apricots; let stand from 30 minutes. Drain. Sift flour, baking powder, soda and salt together. Mix sugar, eggs and butter well; stir in dry ingredients, apricots and orange juice alternately. Add chopped nuts. Pour batter into greased loaf pan. Bake at 350 degrees for 1 hour. Cool for 5 minutes before inverting pan. Serve with cream cheese. Freezes well.
