APRICOT NUT BREAD 
1 c. sugar
2 tbsp. shortening
1 egg
3/4 c. milk
3/4 c. orange juice
4 tbsp. orange rind (opt.)
3 c. plain flour
3 1/2 tsp. baking powder
1 tsp. salt
1 c. chopped dried apricots
3/4 c. chopped nuts (opt.)

Grease one loaf pan. Mix sugar, shortening and egg; stir in milk, juice and rind. Add flour, baking powder and salt. Add apricots and nuts last. Pour into bread or loaf pan and let stand 20 minutes. Then bake at 350 degrees for 70 minutes. When done, butter top of hot loaf.
