ROAST POTATOES 
1 tbsp. olive oil
1 garlic clove, crushed
1/4 tsp. salt
1/4 tsp. freshly ground pepper
1 1/2 lbs. sm. new red potatoes, scrubbed & quartered
1 tbsp. chopped fresh parsley

Preheat oven to 425 degrees. Mix oil, garlic, salt and pepper in 9 inch square baking dish. Add potatoes and turn to coat with oil. Bake until tender and browned, 30 to 35 minutes. Sprinkle with parsley. Serves 6.
