BAKED POTATOES JACK 
15-18 red new potatoes
1/2 c. melted butter
1 c. sour cream
1 c. grated Monterey Jack cheese
1 c. grated longhorn Cheddar cheese
1/4 c. fresh chopped parsley
1 1/2 c. green onions & tops, chopped
Salt & pepper to taste

Preheat oven to 350 degrees. Scrub potatoes and prick each several times with a fork. Place in a shallow roast pan and roast for 1 1/2-2 hours, until fork tender. When cool slice into 1/2 inch slices, leaving skins on. Layer potatoes in 9 x 13 inch pyrex dish.

Combine butter, sour cream and cheeses. Sprinkle potatoes with parsley, green onions, salt and pepper. Spoon cheese mixture over potatoes. Bake uncovered in preheated 325 degrees until slightly browned on top, approximately 30 minutes. Serves 6-8.
