EGG CUSTARD PIE 
4 eggs, separated
2 c. milk, scalded
1 c. sugar
4 tbsp. flour, plain
1 tbsp. butter
1/4 tsp. nutmeg
1 deep dish pie crust

Separate eggs, mix sugar and flour together; add milk, butter, egg yolks and nutmeg.

Place all of this in a deep dish pie crust and put in preheated 400 degree oven until custard is firm.

Beat egg white and add 4 tablespoons of sugar for a meringue. Put on top of cooked pie and put back under boiler to brown a little.

For variations leave off nutmeg and add 1 cup of coconut and 1 teaspoon of vanilla flavor. Add a little coconut on top of meringue. For chocolate pie add 4 tablespoons of cocoa, leave off nutmeg and add 1 teaspoon vanilla.
