BUTTERSCOTCH - MARSHMALLOW SQUARES
1 (12 oz.) pkg. butterscotch chips 1/4-1/2 c. butter 1 c. peanut butter (smooth or crunchy) 1 pkg. sm. marshmallows Combine butter and peanut butter and chip bits in a saucepan on low - medium heat until melted. Take off heat and cool mixture before adding marshmallows. Pour mixture into ungreased cake pan. Spread evenly. Refrigerate until cold and cut into squares. Keep in refrigerator.

For a variation, add 1/2 tsp. of vanilla to the mixture at the end. It brings out the butterscotch flavour. I subbed the marshmallows with 2 cups of Rice Krispies for a less sweet, crunchier version. It's a little heavier, not as light and fluffy tasting, but soooo good!

I tried subbing butter for applesauce! Gives it a more texture taste, try subbing the peanut butter for almond milk ! And the butterscotch for icing!!

Try adding chocolate on top after you refrigerate! Gives it a small chocolate taste and adds to the appearance!

My daughter is also allergic to peanuts so I am going to try it with peanut butter instead. Has the same taste as peanut butter so I think it should work.

You could try WOWbutter instead of Peanut Butter. It is made with Soy, but looks, smells and tastes like peanut butter.

I always had these growing up. They were always a treat on the christmas platter of goods. However my son's are allergic to Peanut butter...do you think I could omit it? I'm thinking of adding the graham wafers on the bottom...but not sure
