MACARONI AND CHEESE CASSEROLE 
1 c. uncooked macaroni
1 tsp. salt, divided
1/3 c. buttermilk pancake mix
1 1/2 c. (about 6 oz.) cheddar cheese, grated
1/4 tsp. pepper
1/2 tsp. liquid red pepper seasoning or 1/4 tsp. dry mustard & 1/4 tsp. cayenne pepper
2 c. milk

Cook macaroni in 4 cups boiling water with 1/2 teaspoon salt. Drain. Place in greased 9"x5"x3" loaf pan. Add gently and slowly, blend in remaining ingredients. Cover pan with foil. Bake 25 to 30 minutes at 350 degrees.

Variation: Add 1 (7 oz.) can drained tuna, 1 teaspoon pimiento, 1/2 cup sliced mushrooms and 1/2 cup partially cooked green peas to loaf before baking. Makes 6 to 8 servings.
