CHEESE - FILLED BACON MUFFINS 
3 c. pancake mix
1 c. milk
2/3 c. bacon drippings
2 eggs
1 lb. bacon
1/3 c. green pepper, finely chopped
1/3 c. onion, finely chopped
2 oz. cheddar cheese, cut into 18 cubes

Fry bacon until crisp. Drain on paper towels and crumble. Reserve 2/3 cup of drippings. Combine pancake mix, milk, bacon drippings and egg in large bowl. Stir just until blended. Add bacon, green pepper and onion; stir to blend. Spoon batter into 6 greased 4 1/4 inch baking cups, filling 2/3 full. Press 3 cheese cubes into each muffin. Place on jelly roll pan and bake at 400 degrees for 25 minutes until golden brown. Remove from pan immediately. Makes 6 muffins.
