MINNESOTA FRESH BLUEBERRY CREAM CHEESE PIE | |
SINGLE CRUST: 1 1/3 c. flour 1/2 tsp. salt 1/2 c. shortening 3 tbsp. cold water Milk or cream Sugar FILLING: 3/4 c. plus 2 tbsp. sugar 2 tbsp. cornstarch 1/8 tsp. salt 1 tbsp. lemon juice 3 c. fresh blueberries, divided 2 tbsp. butter CREAM CHEESE LAYER: 1 pkg. (3 oz.) cream cheese, softened 2 tbsp. sugar 1/4 c. dairy sour cream 1/2 tsp. grated lemon peel DECORATION: Baked flower cut outs 7 blueberries TO MAKE CRUST: Into medium bowl, sift flour and 1/2 teaspoon salt. Using pastry blender, cut in shortening until flour is blended to form pea-size chunks. Sprinkle with water, 1 tablespoon at a time. Toss lightly with fork until dough will form a ball. Press 2/3 of dough between hands to form 5 or 6 inch "pancake". Form remaining dough into smaller "pancake". Lightly flour rolling surface and rolling pin. Roll large "pancake" to fit 9 inch pie dish. Trim 1 inch larger than upside-down 9 inch pie plate. Loosen dough carefully and fold into quarters. Unfold and press into pie plate. Fold edge under. Flute. Prick bottom and sides thoroughly with fork (50 times) to prevent shrinkage. Bake in 425 degree oven for 10 to 15 minutes or until lightly browned. TO MAKE DECORATIONS: Roll remaining dough to 1/8 inch thickness. Using cookie cutter, cut out 7 (2 inch) flowers. Cut 1/4 inch hole in center of each. Place on ungreased baking sheet. Brush with milk. Sprinkle with sugar. Bake in 425 degree oven for 7 to 9 minutes, or until lightly browned. Cool completely. TO MAKE FILLING: In medium saucepan, combine 3/4 cup plus 2 tablespoons sugar, cornstarch, and 1/8 teaspoon salt. Add lemon juice and 1 1/2 cups blueberries. Cook, stirring, over medium heat until mixture comes to a boil. Simmer, stirring often, until thickened. Remove from heat. Stir in butter. Cool to room temperature. Fold in remaining 1 1/2 cups blueberries. TO MAKE CREAM CHEESE LAYER: In small bowl, combine cream cheese, tablespoons sugar, sour cream and lemon peel. Beat at medium speed of electric mixer until smooth. Spread over baked pie crust. Spoon cooled filling over cheese layer. |
