CHICKEN - N - CHEESE DUMPLING

FILLING:

3 c. cooked cubed chicken
4 oz. can mushrooms, drained (optional)
1/2 c. milk
1/2 c. sour cream
2 cans cream of chicken soup

TOPPING:

1 egg
1 c. pancake mix
1/3 c. cornmeal
1/2 tsp. salt
3/4 c. milk
2 c. Cheddar cheese (shredded)

Combine all filling ingredients; simmer. Pour hot filling mix into 9 x 13 inch pan. Combine all topping mix, except cheese. Blend together well. Then stir in cheese. Spoon over chicken mix. Bake at 375 degrees for 20-30 minutes.
