JOHNNY APPLESEED'S FILLED
COOKIES
 
1/2 c. soft shortening
1 c. sugar
2 eggs
2 tbsp. cream (canned milk)
1 tsp. vanilla
2 1/2 c. sifted flour
1/4 tsp. baking soda
1/2 tsp. salt
Thick apple butter

Mix shortening, sugar, and eggs together thoroughly. Stir flour, baking soda, and salt together. Stir into egg mixture. Chill at least 1 hour. Heat oven to 400 degrees.

Roll dough about 1/8 inch thick on a lightly floured board. Cut 2 1/2 inch rounds with a floured cookie cutter. Place half the round on lightly greased cookie sheet. Top each round with a rounded teaspoon of thick apple butter. Make slits in remaining rounds; place these rounds over the filled rounds and press edges together with tines of a fork. Bake at 400 degrees for 8 to 10 minutes. Makes 2 dozen cookies.

My mother made these cookies for my Dad and me and my sisters years ago and we lost the recipe but talked about them all the time. Finally found this recipe, and strangely enough, found my mom's original recipe too!! Her recipe is from Parade Magazine dated April 1, 1962....They are GREAT!!!!
