JOHNNY APPLESEED'S FILLED COOKIES | |
1/2 c. soft shortening 1 c. sugar 2 eggs 2 tbsp. cream (canned milk) 1 tsp. vanilla 2 1/2 c. sifted flour 1/4 tsp. baking soda 1/2 tsp. salt Thick apple butter Mix shortening, sugar, and eggs together thoroughly. Stir flour, baking soda, and salt together. Stir into egg mixture. Chill at least 1 hour. Heat oven to 400 degrees. Roll dough about 1/8 inch thick on a lightly floured board. Cut 2 1/2 inch rounds with a floured cookie cutter. Place half the round on lightly greased cookie sheet. Top each round with a rounded teaspoon of thick apple butter. Make slits in remaining rounds; place these rounds over the filled rounds and press edges together with tines of a fork. Bake at 400 degrees for 8 to 10 minutes. Makes 2 dozen cookies. |
