JOHNNY CAKES 
1 c. sifted flour
1/4 c. sugar
1 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1 c. yellow cornmeal
1 egg
1 c. buttermilk
2-4 tbsp. butter
2 tbsp. molasses

Make a well in center of dry ingredients. Add eggs. Blend in buttermilk, butter, molasses. Add liquid mixture all at one time to dry ingredients. Beat with rotary beater until smooth (do not over beat).

Turn batter into greased pan and spread to corners. Bake 425 degrees about 20 minutes or until toothpick comes out clean when inserted in middle. Cut into 2 inch squares. Serve hot with butter and warm maple syrup.
