SMOKED SAUSAGE AND VEGGIES | |
This is a simple yet filling meal. I continue cooking this because it is a comfort food for me that I have taken from my dad. 1 or 2 pkgs. smoked sausage links (may substitute with kielbasa) 2 small yellow onions (or 1 large) 2 bell peppers (any color; your choice) white or brown rice (I sometimes use quinoa) 1 tbsp. olive oil Cook rice as directed on package (remember the ratio is 2 cups liquid to one cup dry rice). The amount of rice used can be determined by you dependent on your family size. Cook smoked sausage as directed on package, heat in skillet until heated through. Chop up the onions and bell peppers into small slices. Heat olive oil in large skillet. Sauté onions and peppers until tender. To serve, place rice in a bowl, place vegetables over the rice and then top with the smoked sausage. I hope you enjoy! Note: You can double this recipe if you have a larger family.
