CELERY - CUCUMBER - CREAM SALAD 
3 oz. pkg. lemon gelatin
1 tsp. salt
1 c. hot water
1 to 2 tbsp. vinegar
1 tsp. grated onion
1 c. sour cream (or blended cottage cheese)
1/4 c. mayonnaise
1/2 c. chopped cucumber
1/2 c. finely chopped celery
1 (2 oz.) jar pimentos

Dissolve gelatin and salt in hot water. Add vinegar and onion. Refrigerate until syrupy. Beat in sour cream, mayonnaise, celery and cucumber. Pour into mold and refrigerate until set.

For the St. Patrick's Day theme I left out the pimento and poured the mixture into six 4 leaf clover shaped molds. Serves 6.
