CUCUMBERS IN SOUR CREAM (SALAD) 
Pare, then thinly slice 3 cucumbers. Add 1 1/2 teaspoons salt, 1/8 teaspoon pepper, 3 tablespoons minced chives or scallions, 1 cup commercial sour cream or plain yogurt, 2 tablespoons lemon juice. Refrigerate at least 30 minutes before serving. Makes 4-6 servings.
