CUCUMBERS IN SOUR CREAM 
1 lg. cucumber, peeled & thinly sliced
3/4 tsp. salt
1/2 c. dairy sour cream
1 tbsp. lemon juice
1 1/2 tsp. finely chopped onion
1/4 tsp. sugar
1/8 tsp. white pepper
Salad greens
Minced parsley

In a medium bowl, toss cucumber with salt, cover and refrigerate until well chilled. In a small bowl, combine sour cream, lemon juice, onion, sugar and white pepper; blend well. Reserve 1/4 cup of the mixture for garnish. Combine cucumber with remaining sour cream mixture. Refrigerate for 2 hours or until well chilled. To serve, arrange cucumber slices on a bed of salad greens; top with reserved sour cream mixture and sprinkle with parsley.
