CUCUMBER CREAM SALAD 
2 (3 oz.) pkg. lime Jello
1 tsp. salt
2 c. hot water
1/4 c. vinegar
2 tsp. grated onion
2 c. dairy sour cream
1/2 c. mayonnaise
2 c. cucumber, drained, rinsed (measure cucumbers after they have been cut and drained, otherwise you won't have two full cups)

Dissolve Jello and salt in hot water, add vinegar and onion. Chill until slightly thickened, add sour cream and mayonnaise and blend thoroughly. Fold in cucumbers. Pour into lightly oiled 6 1/2 cup mold. Chill until firm. Turn out onto serving plate. Trim with small pieces of parsley if desired.
