ZUCCHINI CASSEROLE 
1 lg. zucchini, cut into chunks
2 carrots, shredded
1 med. onion, chopped
1 Stove Top stuffing pkg.
1/2 c. butter
1 can cream of chicken soup
1 c. sour cream

Cook zucchini, carrots, and onion for 5 minutes. Drain. Mix stuffing and butter. Add soup and sour to zucchini mix. Layer 1/2 cup zucchini mix. Layer of Stove Top stuffing. Layer until used up. Top with stuffing last. Bake uncovered 1 hour at 350 degrees.
