OST KAKA (Swedish Cheesecake) 
1 pt. carton dry cottage cheese
5 or 6 eggs
1/2 pt. whipping cream
1/2 c. sugar
1 1/2 tsp. almond flavoring

Beat eggs. Add sugar, almond and unwhipped cream. Add dry cottage cheese. Grease baking dish with butter. Bake 1 hour 350 degree oven. I will stir it a couple of times after it has been baking for 15 minutes then finish baking it. Serve with Vanilla Sauce.

VANILLA SAUCE:

1 c. heavy cream
3 egg yolks
2/3 c. powdered sugar
1 tsp. vanilla

Whip cream until stiff. Beat egg yolks until thick. Add powdered sugar slowly while beating. Add vanilla. Beat until light and foamy. Fold in whipped whipping cream. (Or you can use lingon berries or whip cream for your topping.)

The above recipe is not a real one for ost kaka. The real one uses 1 gallon milk and rennett. That is from my grandmother.

really it requires 2 1/2 gallons of raw milk and 1 rennett tablet.. made it today, it was rewarding because of my swedish heritage... have recipe from New Sweden cookbook in Elgin TX
