SQUASH & CHEESE 
3 or 4 med. yellow squash
Pepper
Salt (opt.)
2 tbsp. butter
1/4 c. onion, chopped
1/4 lb. Velveeta cheese, grated

Saute onion in butter over low heat. Wash and slice squash. Add to butter and onion. Cover, cook until tender. Salt and pepper to taste. Remove from heat. Sprinkle grated cheese on top. Cover. Let stand until cheese is melted.
