SQUASH - CHEESE SOUFFLE 
1 c. milk
1 c. bread crumbs
3/4 tsp. pepper
1 c. shredded cheddar cheese
4 or 5 med. yellow squash, sliced and cooked
1 tbsp. grated onion
3 eggs, beaten
3 tbsp. melted butter

Heat milk and pour over bread crumbs; add eggs, pepper, butter, and onion; mix well. Stir in squash and cheese. Pour into a greased 2-quart casserole dish. Bake at 350 degrees for 25-30 minutes or until firm. Serves 6-8.
