GOOD HEALTH OAT BRAN MUFFINS 
2 1/4 c. oat bran cereal
1 tbsp. baking powder
1/4 c. raisins
2 tbsp. vegetable oil (I used olive oil)
1 c. evaporated skim milk
2 egg whites
1 (16 oz.) can fruit (I used canned pears)

Mashed bananas are great too. Use fruit in own juice (no sugar added).

Preheat the oven to 425 degrees. Mix the dry ingredients in a bowl. Now mix all the other ingredients except the pears (or other canned fruit). Add the liquid mixture to the dry ingredients and mix. Chop the fruit fine and add to the batter. If the batter seems to be a bit dry, add a little fluid from the fruit.

Line the muffin pan with paper baking cups and fill with the baker. Bake for 17 minutes or until a toothpick comes out dry. DON'T OVER BAKE!

This recipe will make 12 delicious muffins, that will give one the right amount of fiber for the beginning of a healthy diet.
