RAISIN-NUT OAT COOKIES 
1/2 c. brown sugar
1 egg or 2 egg whites
1 tsp. oil
1/4 tsp. salt
1/2 c. rolled oats
1/2 c. coconut
1/2 c. nuts, chopped
1/2 c. raisins (chocolate chips can be substituted)
1/2 tsp. vanilla

Preheat oven to 375°F. Beat sugar and egg together until light and fluffy. Add remaining ingredients and mix well. Drop by teaspoonfuls 2 inches apart on an oiled baking sheet and bake 9 minutes or until tops are golden. Cool on baking sheet several minutes, then carefully remove to a rack.

Makes about 18 cookies.
