“NO BAKE OATMEAL COOKIES” IS IN:

NO BAKE OATMEAL COOKIES 
3 cups quick-cooking oats
1 cup flaked coconut
3 tbsp. cocoa
1/2 cup nuts
2 cups sugar
1/2 cup milk
1/2 cup (1 stick) butter
1 tsp. vanilla

Cook sugar, milk and butter. Bring to a boil and boil for 1 minute. Add the vanilla. Pour over all other ingredients and stir until well mixed. Drop by teaspoonfuls onto waxed paper to cool.

I tried to make a healthier version using soy milk, honey, and earth's balance (non-dairy butter) as substitutes and made the most awesome concoction (basically turned out as oatmeal). I am wondering what actually makes the cookies stick?. Thanks for the awesome recipe. I will be trying this again.

A comment for Princess High's question... what makes them "stick" is boiling the butter, milk and sugar mixture for the exact amount of time. Too long and the cookies will crumble, too little and they will not set up. This is a good recipe, I use unsweetened coconut and have not added the nuts yet.

I took the coconut and nuts out and put in one extra cut of oats. I also used old fashioned rolled oats. It turned out very yummy. Good basic recipe.

I cut sugar to 1 1/4 cups sugar, 5 tbsp. cocoa, 1/2 cups peanut butter and 1 cup coconut. Absolutely awesome!!
