CRANBERRY OAT BRAN MUFFIN 
2 c. flour
1 c. oat bran
1/2 c. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. cholesterol free mayonnaise
3 egg whites, slightly beaten
1/2 c. skim milk
1/3 c. orange juice
1 c. coarsely chopped cranberries

Preheat oven to 375 degrees. Line 12 medium muffin cups with paper baking cups. Mix dry ingredients. Add mayonnaise, egg whites, milk, juice and rind. Mix just enough to moisten; fold in cranberries. Fill cups almost full. Bake 15-17 minutes or until golden brown.

LOOOOOved this recipe. Thanks! :D I loved that it wasn't too heavy and bran-ish. I find cranberries to be a really strong flavour so I substituted in some McIntosh apples for half of the cranberries and replaced the orange juice with applesauce. It was delicious! Afterwards I considered adding cinnamon and perhaps vanilla but I haven't tried it yet.
