HAPPILY EVER AFTER OAT BRAN
MUFFINS
 
2 c. oat bran cereal (buy at a food co-op)
1/4 c. brown sugar
2 tsp. baking powder
1 c. skim milk or soy milk or goat milk
2 egg whites, slightly beaten
1/4 c. molasses or honey
2 tbsp. vegetable oil

Don't mix these together too much. Bake at 425 degrees for 10 to 12 minutes. These muffins are great for someone that has wheat and dairy allergies.
