CAROLINA HASH BROWN CASSEROLE 
I have found most hash brown casserole recipes to be bland, so I came up with this version, which we like a great deal. Sometimes I use hot pickled okra instead of jalapenos. Other toppings could be Panko breadcrumbs or crushed Cornflakes. Enjoy!

1 bag frozen hash brown potatoes, thawed
1 can white corn, drained
1 can cream of chicken soup
1 can cheddar cheese soup
1/2 cup sour cream
1/2 cup Half and Half
1/2 cup chopped onion
1/2 cup chopped green or red pepper
1/4 cup chopped jalapeno peppers
1 cup shredded cheddar cheese
1/4 cup (1/2 stick) melted butter
1 tsp. salt
1/2 tsp. black pepper
Parmesan cheese
Ritz crackers

Mix all of the ingredients together except the Parmesan cheese and Ritz crackers.

Pour into a well-greased 9 x 13" casserole dish.

Top with Parmesan cheese and crushed Ritz crackers.

Bake at 350°F for 45 minutes. Let set for about five minutes before serving.
