BLACK WALNUT SPICE CAKE 
1 c. chopped black walnuts
1/2 c. butter
2 c. brown sugar
3 eggs, separated
1 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves
3/4 c. milk

Place nutmeats in boiling water for a few minutes. Drain. Cream butter and sugar together; add egg yolks. Add dry ingredients with the milk to the first mixture. Add nutmeats. Fold in the beaten egg whites. Bake in muffin tins 2/3 full or in 3 eight and one half inch layer cake pans.
