PETITE CHERRY CHEESE CAKES OR
MINIATURE CHEESE CAKES
 
2 pkgs. (8 oz.) cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
20 to 24 vanilla wafers
1 can (21 oz.) pie filling

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line small muffin pans with paper baking cups and place a vanilla wafer in each. Fill cups 3/4 full with cream cheese mixture. Bake at 375 degrees for 15 to 20 minutes or until set. Top with pie filling and chill.
