MINIATURE CHEESECAKE TARTS 
2 (8 oz.) pkgs. cream cheese, softened
1/2 c. plus 2 tbsp. sugar
2 eggs
1 tsp. vanilla

Beat together with mixer until smooth.

In bottom of foil muffin cups (miniature), place one vanilla wafer. Fill cups 3/4 full with mixture. Bake at 375 degrees for 10 minutes; cool.

Top with cherry, blueberry, or pineapple pie filling. Makes about 40 tarts.

NOTE: Size of cheaper wafers (other than Nabisco) seem to work better.
