MINIATURE CHEESECAKE TARTS 
2 (8 oz.) pkgs. cream cheese
2 eggs
2/3 c. sugar
1 tsp. vanilla
Vanilla wafers (Sunshine brand are usually right size)
Cherry pie topping (or other favorite)
Small foil baking cups (midget size)

Beat all ingredients together until fluffy. Put a vanilla wafer in each foil cup. Fill each cup full with cream cheese mixture. Bake at 375 degrees for 12-15 minutes. Cool and top each tart with cherry filling or topping.
