CREAM CHEESE TARTS (MINIATURE
CHEESECAKES)
 
2 pkgs. (8 oz.) cream cheese, softened
2/3 c. sugar
2 eggs, lightly beaten
1 tsp. vanilla
Vanilla wafers
Canned cherry or blueberry pie filling or fresh fruit

Preheat oven to 375 degrees. Cream the softened cream cheese with the sugar. Add eggs and vanilla, beat until fluffy. Using a muffin pan and liners, place a vanilla wafer in each liner. Fill 3/4 full with cheese mixture. Bake at 375 degrees for 15 minutes. Cool. Top each tart with canned pie filling or fresh fruit. Yields: 16 to 20 tarts.

I made these the other day and made mistake of putting evaporated milk in, they fell a little. Thanks for the original recipe. I also make my own crust with graham crackers, lil brown sugar, 1/4 cup butter and ginger snaps. I grind all of the cookies and butter and crackers together. I use my wooden grinder to smash them into the cups then fill. I plan on making more soon!

Deborah, why did you even bother to review this recipe since you didn't actually MAKE it. You simply reviewed your own recipe....Also, how could anyone "accidently" add milk when it's not mentioned anywhere in the recipe.

Deborah - thanks for putting in your idea for the crust. It sounds original - and better than a plain graham crust - and would be excellent with this filling. Joanne - some of us - LOVE inserts into recipes that do provide new idea's. Food being really expensive today - any & all idea's - DO count. Joanne - think your problem - goes beyond... recipe's & posts...
