CREAM CHEESE TARTS (MINIATURE CHEESECAKES) | |
2 pkgs. (8 oz.) cream cheese, softened 2/3 c. sugar 2 eggs, lightly beaten 1 tsp. vanilla Vanilla wafers Canned cherry or blueberry pie filling or fresh fruit Preheat oven to 375 degrees. Cream the softened cream cheese with the sugar. Add eggs and vanilla, beat until fluffy. Using a muffin pan and liners, place a vanilla wafer in each liner. Fill 3/4 full with cheese mixture. Bake at 375 degrees for 15 minutes. Cool. Top each tart with canned pie filling or fresh fruit. Yields: 16 to 20 tarts. |
