CARROT CAKE 
2 c. flour
2 c. sugar
2 tsp. cinnamon
2 tsp. baking soda
1 tsp. salt
1 c. Wesson oil
4 eggs
3 c. grated carrots

Icing:

1 box powdered sugar
1 stick butter
2 tsp. vanilla
1 c. chopped nuts

Cream sugar and eggs. Add oil. Combine dry ingredients and add gradually. Mix well. Stir in grated carrots. Bake at 350°F for 35 minutes or until done.

Bake in 9 x 13 x 2 greased pan.
