CARROT CAKE 
2 c. sugar
1 1/2 c. Wesson oil or Crisco oil
4 eggs, unbeaten
2 tbsp. baking soda
1 tsp. salt
2 tsp. cinnamon
2 c. flour
3 c. grated carrots (almost 1 lb.)
1/2 c. chopped nuts

Cream sugar and oil until fluffy, add eggs and mix well. Mix in dry ingredients, carrots and nuts. Bake at 350 degrees for approximately 1 hour. Grease and flour pan.

TOPPING:

1 box powdered sugar
4 oz. Philadelphia cream cheese
1/4 lb. butter
1 tsp. vanilla
Lemon juice - couple of squirts to kill cheesy taste

Mix ingredients well with mixer.
