BAKED TILAPIA 
1/4 c. celery
1/4 c. onion, chopped
1/4 c. sweet red pepper, chopped
3 tbsp. butter
3 tbsp. flour
Salt and pepper to taste
1/2 tsp. dried tarragon
1/2 tsp. dried basil
1 1/4 c. milk
1 c. Mozzarella cheese, shredded
1 1/2 lbs. Tilapia fillets

In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil, flour and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil.

Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12x8x2 inch baking dish; spoon the sauce evenly over the fish.

Bake at 425°F. for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork.

Serves 4.

Very good recipe. The sauce is perfect for the tilapia. For the cheese, I replaced half of the mozzarella with shredded Monterey Jack. It added a nice flavor component.

Great recipe! I made it per the directions the first time, and it was a big hit with my family. The next time I made it, I thinned the sauce out just a bit, used shrimp instead and served it over thin noodles. That was awesome as well. This one will be a permanant in my book!

This recipe was very simple and because I am on the weightwatchers program it was really simple to stay on the pointsplus schedule. It was delicious.

Liked this very much! I didn't have any tarragon so I substituted oregano. The sauce was great and I stirred it in with the rice, as well. Like the idea of using Monterey Jack, I'll try that next time!
