BAKED TILAPIA | |
1/4 c. celery 1/4 c. onion, chopped 1/4 c. sweet red pepper, chopped 3 tbsp. butter 3 tbsp. flour Salt and pepper to taste 1/2 tsp. dried tarragon 1/2 tsp. dried basil 1 1/4 c. milk 1 c. Mozzarella cheese, shredded 1 1/2 lbs. Tilapia fillets In a medium skillet, saute the celery, onions and sweet red pepper in butter until tender. Add the salt, pepper, tarragon, basil, flour and milk; mix well. Cook for 1 minute, stirring constantly until thickened. Add the cheese and stir until melted. Do not boil. Rinse the Tilapia fillets in cold water and drain thoroughly. Place the fish in a 12x8x2 inch baking dish; spoon the sauce evenly over the fish. Bake at 425°F. for 8 to 10 minutes, or until the fish flakes evenly when tested with a fork. Serves 4. |
